I'm not going to beat myself up
I didn't work out last night like I planned. I was on the phone with Sean for like, two hours. I don't think I mentioned that he's in Chicago this week getting training for his job. It's okay, I'll just work out on Sunday. It's not a big deal.
Last night we had BBQ Tofu stir-fry with biscuits and a spinach salad. For the tofu I used the recipe from the 5-Ingredient Vegetarian Cookbook (by Nava Atlas) only I seared the tofu first and also added mushrooms. It was delicious! BBQ Sauce + Tofu = Awesome! The biscuits turned out a little dry. I haven't quite mastered whole wheat biscuits. I probably should've made cornbread instead.
So here's my Food & Exercise Log for yesterday:
B: oatmeal with soymilk, blueberries & Flax seed
S: banana
S: Apple
L: Frozen Tofu & Black Bean Enchiladas meal from Safeway (it was amazingly delish! I need to check out their other vegan frozen meals)
S: baby carrots
D: BBQ Tofu Stirfry (Tofu with mushrooms, onions & BBQ sauce), whole wheat biscuit and a spinach salad
Workout: Nothing
